This is a nonclassic, but it has definitely changed my life. (I'll get to the more intellectual books later). Peeps by Scott Westerfield. Every other chapter, he gives the reader a brief, factual lesson in parasitology. His explnation of how toxoplasmosis alters the brain is chilling. Even the lowly hookworm is frightening. And I will never, ever eat another slice of rare meat. All that aside, it's a good read. The others in the series don't look promising, but this is a quick bag of potato chips.
